Tier 3 Wedding Package

​

This package includes lunch on the day of the wedding for the bride and groom suites, 4 appetizers, 2 proteins, 6 sides, Food Dude salad, 8 pm snack, china, glass stemware, silverware, cloth napkins, and wait staff. There is also an extended steak menu list.

 

Beef Steak Diane

Filet medallions that have been marinated in olive oil, black pepper, onions, and differing seasonings. Grilled and topped with our house diane sauce.

Cowboy Filet

Marinated filet medallions that are then blackened, grilled and topped with sauteed vegetables with a Sante Fe Compound Butter.

 

Sante Fe Filet

Marinated filet medallions smothered in Sante Fe Compound butter. Crab Newberg Filet Marinated filet medallions grilled and topped with a crab Newberg sauce.

 

Prime Rib

Choice 13 and under Standing Rib Roast that is seasoned, roasted in a wood pellet grille and served with au jus and Diane sauce.

 

Dry Aged Prime Rib (an additional $10.00 per person)

Prime standing rib roast that has been dry aged to give this a truly unique flavor and texture profile. It is seasoned, and grilled in a wood pellet grille. Come with au jus.

 

Italian Roast Beef (carving available)

Slow roasted steamship round of Roast Beef in Italian herbs and spices. Flank Steak Tender slices of marinated Flank Steak charbroiled and topped with a BBQ sauce.

 

Beef Short Ribs

Slow braised short ribs in a rich brown gravy with tomatoes, herbs, and seasonings.

 

Carnitas New Orléans

Tender pieces of filet sautéed with onions, celery, green peppers, and Cajun seasoning. Served over dirty rice.

 

Smoked Brisket

Slow Smoked brisket. Smoked Corned Beef A real treat. This is a corned Brisket and then is slow smoked in house. Topped with a light BBQ Sauce.

 

Carved Tender

Tip Sauteed filet tips with onions, mushrooms, green peppers, squash, in our own braising liquid served over dirty rice. Pork All pork is from premium breeds to ensure tenderness and quality of taste.

 

Braised Pork Shanks

We first marinate the pork shanks in a Brown sugar brine. It is then slow roasted with onions, celery, carrots, wine, herbs and seasonings. After the cooking a succulent sauce is made from the pan au jus to make this a special dish.

 

Vermont Pork Chop

A marinated frenched bone in pork chop that is seasoned, grilled, and topped with a Asian infused Maple bourbon sauce.

 

Bourbon Chipotle Pork Chop

A seasoned frenched bone in pork chop that is grilled and then topped with our sauce.

 

Italian Stuffed Pork Loin

A pork loin that has been marinated in fresh herbs and stuffed with Italian sausage, provolone cheese, mushrooms, and onions. Topped with a Dijon cream sauce.

 

Stuffed Pork Loin

A pork loin that has been marinated in fresh herbs stuffed with feta cheese, dried fruits, spinach, and mushrooms. Topped with an Asian infused apricot glaze.

 

Marinated Smoked Pork Chops

Smoked bone in pork chops charbroiled and topped with our house made sauce.

 

Peppered Pork Loin

Pork loins marinated in olive oil, herbs, and black pepper. Wienerschnitzel This classic German dish made with pork instead of veal. It is sliced thin and coated in special bread crumbs and topped with a mushroom sauce.

A chicken breast stuffed with sautéed vegetables that are dredged in Italian bread crumbs and fried until golden brown in lard. Topped with a Dijon cream sauce.

 

Chicken Parmesan

A chicken breast dredged in Italian bread crumbs sautéed in olive oil and topped with mozzarella cheese and homemade marinara sauce.

 

Rainbow Chicken

Charbroiled chicken breast topped with bacon, mushrooms, cheese, and honey Dijon sauce.

 

Chicken Marsala

A chicken breast dredged in Italian bread crumbs sautéed in butter. Topped with mushrooms, tomatoes, and onions, provolone cheese, and marsala wine sauce.

 

Chicken Divan

Chicken filets sautéed in butter topped with broccoli, prosciutto, mushrooms, provolone cheese and a cream sauce.

 

Jamaican Jerked Chicken

Chicken Breasts that have been marinated in jerk seasoning for 48 hours, grilled, and topped with our Jamaican Sauce.

 

Chicken Paprikash

A traditional Hungarian chicken dish with our Food Dude spin on it.

 

Jambalaya Pasta

Chicken, andouille sausage, and shrimp in our creamy Cajun sauce served over penne pasta.

 

Chicken Saltimbocca

Appetizer Menu

 

The appetizer menu allows you to customize your existing package with three choices, or as a meal by itself with 5 options. We provide plastic plates, silverware, and napkins.

 

House Wings

Jumbo wings seasoned, smoked, and deep fried. They are then tossed in our house made Food Dude hot sauce.

 

Wings (bone in or boneless) Jumbo wings breaded and deep fried. All sauces our house made. BBQ, Szechuan, Plum, Sweet and Tangy.

 

Taco Bar Shredded chicken, shredded pork, chorizo. Served with lettuce, cheese, flour/corn tortilla, pica da gallo, jalapenos, salsa, and sour cream.

 

Toasted Ravioli Hand breaded ravioli with marinara.

 

Chicken Singapore Chunks of chicken breast breaded in panko bread crumbs, deep fried and served in our rich Singapore sauce.

 

Stuffed Mushrooms: Spanish, Seafood or Italian

You choose from one of our house made stuffing’s. The Italian is made with Italian sausage, parmesan, onion, and mushrooms. The seafood is made with crab, shrimp, parmesan, onion, bread crumbs, and gouda cheese. The Spanish is made with chorizo, onions, bread crumbs, queso fresca, and roasted peppers.

 

Spicy Meat Turnovers

Dough filled a spicy house made meat filling.

 

Bang Bang Shrimp

Gulf shrimp dredged in seasoned flour and sautéed in butter. Tossed in a spicy Thai sauce with coconut rum. Topped with scallions.

 

Charcuterie board (the extensiveness of the charcuterie depends on number of guests) An assortment of cheese, meats, vegetables, fruits, roasted vegetables, pickled vegetables, and nuts. Comes with crackers.

 

Tandoori Chicken Seasoned fresh chicken that has been marinated in tandoori seasonings and served with a peanut sauce.

 

Sliders

 

Chicken

Salad Not your grandma's version. It has pulled roasted chicken, pecans, craisons, grapes, onions, celery, and honey. Served on mini croissants.

 

BBQ Pork

Slow roasted pork with our own blend of herbs and spices. Topped with the house made bbq sauce.

 

Flank Steak

Blackend flank steak with a hint of bbq sauce. Served with a cilantro cream sauce and arugula. French Dip (2.00 more per person) The food dude version uses braised short rib meat with a rich au jus. Served on slice French rolls.

 

Chicken Monterey

Thinly sliced chicken breast marinated in Catalina dressing. It is then grilled and topped with more of our house dressing. Served with cheese, and arugula.

 

Meatball sliders

House made meatballs in marinara sauce.

 

Reuben sliders

Pastrami with Swiss cheese, sauerkraut, and house made 1000 island dressing. Served with mini rye bread.

 

Chicken Cutlet

A thin chicken cutlet that is brined, breaded, and grilled in olive oil. Served with our house salad to top with.

 

Chicken Singapore Cutlet

A thin chicken cutlet that is breaded and then grilled in olive oil. Topped with our Singapore sauce.

 

Italian Subs

Honey roasted ham, smoked turkey, genoa salami, and pepperoni on French bread with Swiss cheese, arugula, ranch vinaigrette, mustard, mayo, and balsamic vinegar.
